Abstract : Two studies indicate that the grading of beef livers can be performed objectively by means of the ratio between two height measurements taken at specific points. The ratio of 0.50 between the shorter height and the taller height (Height2/Height1) was adequate to allow the selection of high quality livers. The conforma tion of the liver was found to be highly signifi cant in the selection of liver for quality as indicated by taste panel preference socres. Color was insignificant in the selection of beef liver. (Author)
