Abstract : A transformation in glucose monohydrate at 37C, evident from dilatometric and X-ray data, is reported. This transformation, accompanied by the loss of the water of crystallization, appears to be associated with the secondary transitions occurring at moderate temperatures in mono- and polysaccharides. A possible mechanism of these transitions is discussed. (Author)
