Abstract : The principles of mathematical modeling are applied to the development of a prototype system for assisting shipboard food service management by computer to deliver meals which are suited to the crew preferences, are nutritiously balanced, meet the ration allowance and also satisfy a number of predetermined food loading, storage and logistic conditions. The problem is formulated in the framework of a mathematical programming system, where crew preferences are to be maximized subject to a set of constraints. A method is outlined to measure preference ratings suitable for mathematical manipulations and for the computation of menu item production estimates for selective menus. It is shown that menu schedules can determine the cost, nutritional quality and food input needs of food service and on the basis of the corresponding mathematical relations a set of computer programs is developed to perform tests on user-supplied menu schedules accordingly. The programs are designed to operate within the system of data sources and food service regulations of the Navy. (Author)
