Abstract : Research is being done on processing techniques of producing dried potato puree by using foam-drying. The main system of this process consists of the following basic technical operations: washing the potatoes, peeling and cutting, cooking them until done, mashing the potatoes and thinning to a puree, introducing a foam stabilizer, formation of the foam, and drying of the frothy material. The process of foam formation of potato puree is being discussed.
