Abstract : This symposium presents the current status and future prospects of a system for thermoprocessing foods in flexible packages. Pioneering this concept has meant establishing a total technology--from testing of potential packaging films and specific food formulations to the final transition from concept to production line, demonstrating that reliable production is possible. Supporting technology, such as test procedures, in-process control systems, and quality-assurance techniques are included. Although all relevant aspects of this development will be discussed, emphasis in this symposium is on the determination of reliability under production conditions. (Author-PL)
