Abstract : The possibility of using packets of polyethylene film and type PTs-2 polyethylene-cellophane for packaging of dried fruit was studied. Compotes of dried fruits, cherries, plums, apples, cornelian cherries and pears, were placed in 0.5 kg packets of polyethylene films 0.12 mm thick. The products were stored for one year at 20-22C, relative humidity 40-48%, and at -5C, relative humidity 60-64%. During storage, the changes in the content of dry pulp sugars, acids and cellulose in the products were studied.
