Abstract : Storage of onion powder in domestic polyethylene-cellophane and foreign RE cellophane packages at a temperature of 35-37C and in a warehouse with unregulated temperature and relative humidity were investigated. Data are presented on deterioration of color, consistency, odor and taste and vitamin C content, as well as data on change in moisture and volatile oil content and optical density of an alcohol-water extract. Unsuitability of this type of packaging for storage of onion powder is demonstrated. (Author)
