Abstract : Heat transfer coefficients between two fluids permit the characterization of the material transfer under the same forced convection conditions, provided that the phase boundary is clean and is covered by a film of surface-active substances, or if the phase boundary is subjected to the effect of material transfer with Marangoni stability. Such characterization is not possible in the case of boundary-surface convection free from Marangoni instability. The tests on which these conclusions are based were conducted with a special interferometer equipped with sinusoidally oscillating stirrers measuring the temperature differentials between two phases (isoamyl alcohol/water, cyclohexanol/water, cyclohexane/water, and carbon tetrachloride/water; with saponine as the surface-active substance in some of the determinations).
